Wailing Caverns in the Barrens is hands down the best place to find both light and medium leather, and light and medium hide, since almost everything in the instance is skinnable.

For the medium hide and leather, you'll have to go a bit deeper into the instance around where you find the cloud serpents.

Keep in mind that anywhere you find medium leather, you will find medium hide, but in much lower quantities, rather like findng gems while mining minerals - it's never a guarantee and sometimes you get lucky, other times not.

Boars and dragons in Redridge are also good to farm, if you are Alliance and cannot get to WC without getting ganked.

Blackened Basilisk in stone talon seems to work fine for me. kille ~10, and got the 2 medium hides i needed for my leatherworking :D

Save the Ceinture élégante en cuir you make to skill up leatherworking and combine them with the medium hides you cure to create Ceinture noire en cuir (a trained pattern) at skill 125.
